Eim Thai Food Truck (Gainesville, FL)

Pad Kway Teow

Eim Thai has me hyped for the weekend!

The best thing about Eim Thai is how flavorful and fresh their food tastes. You can order from their truck and depending on the line, it might take 10-20 minutes. They have all the classics like Pad Thai, Thai Spring Rolls, and Curry, as well as specials depending on the day like Crying Tiger Grilled Steak (a thai style marinated and grilled steak) and Tom Kha Kai (Thai Coconut Soup). They also sell packs of beef jerky and curry powder, which usually sell out quick.

All their standard dishes are $10 (with tax)! They are priced really well for the amount of food you get, because you will be stuffed.

For their noodle and curry dishes, you can choose between tofu and chicken.

Their Pad Thai has noodles cooked chewy and firm, with a mostly sweet, slightly sour sauce, which beansprouts carrots, and your protein of choice.

If you like your noodles more savory, you could try Pad Kway Teow, which is similar to the Pad Thai but with a savory sauce and cilantro.

Pad Kee Mow is one of my favorite dishes, and although Eim Thai’s version does not have the wide rice noodles, it is still very flavorful with the skinnier noodles. You can choose your spice level from 1-4 and I usually go for a 3, which definitely has a kick! I also appreciated the wide variety of veggies including broccoli, green beans, bell peppers, celery, bean sprouts, and bamboo shoots to add a nice texture to the dish.

Their Green Curry was also delicious and has plenty of veggies (similar to those in the Pad Kee Mow) as well as plenty of thai basil, along with a side of jasmine rice. This is definitely a dish I will be getting again.

The fried rice was a good, simple dish with protein, carrot, and broccoli.
